Papaya Salsa Recipe from: Bob or Joy Joyner 1 medium papaya, peeled, seeded and chopped (1 1/2 cups) 1 small cucumber, peeled and chopped (1 cup) 1 small carrot, shredded (1/3 cup) 1 habanero, seeded and chopped 1 tablespoon lime juice 1 tablespoon white vinegar 1/2 teaspoon sugar 1/4 teaspoon salt Combine, cover and refrigerate at least 4 hours for the flavours to blend but no longer that a couple of days.
