Mango Salsa Recipe from: "Dancer^" Servings: 1 1/2 cups 1 mango or 1/2 of a papaya, peeled, seeded, and chopped (1 cup ) 1 medium sweet green pepper, seeded and chopped (3/4 cup ) 1 small red onion, finely chopped 1 jalapeno pepper, finely chopped 2 tbsps. pineapple juice or peach nectar 1 Tbsp lime juice 1/8 tsp. salt 1/8 tsp. pepper Stir together mango sweet pepper, onion, jalapeno pepper, pineapple juice, lime juice, salt and pepper in a large bowl. Cover and refrigerate up to 3 or 4 days.
