Stoney Road Tomato Salsa - World Champion 1997

Recipe from: Le Ann Nienow

3 long green Anaheim peppers, use pepper and seeds, take out seed pod
2 fresh yellow peppers, remove seeds and mince
6 or more medium tomatoes
1-2 medium red onions
2 green onions
1 garlic clove, minced

Chop and mix all of above.

<u>Add</u>:
1 Tbs Rice Vinegar
1 Tbs Fresh Lime Juice
1 Tsp Sugar
1 Tsp Olive Oil
1/4 to 1/2 cup Minced fresh cilantro leaves
Salt to taste
