Salsa de Frutas Recipe from: Bubbabob Servings: 4 cups 4 plum tomatoes, seeded and cut into 1/4-inch dice 1 C seeded and diced (1/4-inch) ripe cantaloupe 1 C seeded and diced (1/4-inch) ripe watermelon 1 C peeled, seeded and diced (1/4-inch) cucumber 1/3 C peeled and chopped red onion 1 tsp seeded and finely minced Jalapeño pepper 2 Tbs fresh lime juice 2 Tbs coarsely chopped cilantro Mix all ingredient together in a bowl. Let rest at least 1 hour before serving. There will have juice left over once it's eaten. The juice is a perfect marinade for grilled fish. I prefer to make it with finely diced habañero chile instead of the Jalapeño.
