Peach Salsa Recipe from: Bristol Farms advertisement 2 ripe, but firm medium Oh Henry peaches 1 tablespoon vegetable oil 1 tablespoon fresh lime juice 1/4 cup diced red bell pepper 1/4 cup diced green bell pepper 1/4 cup finely chopped red onion 1 tablespoon chopped cilantro 1 teaspoon (or to taste) minced jalapeno pepper 1/2 teaspoon salt fresh ground black pepper to taste Wash the peaches. Do not peel, but cut each in half and remove the pits; cut into 1/2 cubes. Mix together the oil and lime juice in a mixing bowl. Add all remaining ingredients, and toss to mix well. Allow to stand five minutes or so, then taste for seasoning (you may like more lime juice, jalapeno, salt, etc.) Salsa will keep one day in refrigerator before beginning to lose texture and may be kept longer, still having good flavor.
