Black Bean and Corn Salsa Recipe from: "Polar-Express" <msi@muhlon.com> Servings: 4 cups 1 15 ounce can black beans, rinsed and drained 1 cup frozen corn kernels, thawed 1/2 cup chopped red bell pepper 1/2 cup chopped fresh cilantro 3 tbs. lime juice 8 small green onions, chopped 2 tbs. balsamic vinegar 1/2 tsp. ground cumin 1 small green chili, optional - have used crushed red pepper Mix all well. Refrigerate overnight to let flavors combine.
