Hoi Nang Rom Sot (Fresh Oysters) หอยนางรมสด

Recipe from: กุ้ง หอย ปู ปลา (Shrimp, Shellfish, Crab, Fish), translated by Clay Irving.

4 large oysters
15 tops of lead tree (See krathin in Thai Food Glossary)
2 tablespoons fried red shallots

Pry open shell and wash until clean. Separate from shell arrange shell on plate. Place the lead tree beside the oysters. Put a bowl of fried red shallots and a bowl of nam jeem beside the plate. Ladle nam jeem on the oysters. Sprinkle fried red shallots on the oysters. Serve and eat with the lead tree.

For the nam jeem:
10 finely chopped prik ki nu
15 finely chopped garlic cloves
1 teaspoon salt
3 tablespoons lime juice

Mix prik ki nu with garlic and salt. Add lime juice and blend together.
