Oysters Louise

Recipe from: Louise Austin

This recipe is from my aunt, Louise Austin, from the cookbook, What's Cooking with FLO?, favorite bayou country recipes of FLO (For Ladies Only) from the First Baptist Church in Napoleonville, Louisiana published in 1990.

This recipe was a first place winner at the LP&L [1] Small Appliance Contest in 1976.

2 dozen oysters
8 to 10 slices bacon, fried crisp and crumbled
salt, to taste
red pepper, to taste
black pepper, to taste
garlic powder, to taste
¾ cup chopped green onions
1 can chopped mushrooms, drained
½ to ¾ cup Parmesan cheese
bread crumbs
2 cups grated Mozzarella cheese

Lay oysters in the bottom of a skillet with a small amount of bacon grease. Broil until edges curl. Add green onions; return to broiler and broil until onions get hot, but not cooked. Sprinkle evenly with bacon crumbs, mushrooms, Parmesan cheese, and seasonings to taste. Spread evenly with bread crumbs and top with Mozzarella cheese. Return to the broiler until hot and cheese is melted.
