Thai-Style Burgers with Mint Cucumber Relish

Servings: 4 to 6 burgers

1 pound lean ground beef
1 tablespoon lemon grass, finely chopped
¼ cup fresh chopped cilantro
2 teaspoon nam pla or soy sauce
1 teaspoon brown sugar
½ teaspoon grated lime peel
½ teaspoon hot oriental chili paste
½ teaspoon salt
½ cup fresh breadcrumbs

½ English cucumber or regular cucumber, chopped
¼ cup chopped fresh mint
1 tablespoon nam pla or soy sauce
1 tablespoon rice vinegar
1 tablespoon sugar (use much less, use none actually)

Combine burger stuff, shape into 4 to 6 burgers. Drain chopped cucumber and mix in remaining ingredients. Reserve.

Just before serving, heat grill and brush with oil. Cook burgers and 4 minutes per side, turning once.

Note:
If lemon grass is very dry, soak 20 minutes before using. If you cannot find lemon grass, use 1 teaspoon grated lemon peel.
