1 ½ pound lean beef
1 small yellow onion, finely minced
butter
2 tablespoons thyme
Grind beef. Sauté onion in butter until lightly golden. Combine ground beef with sautéd onion, thyme and preferred seasonings, to taste. Add slightly beaten egg to beef mixture. Shape into patties. Dust with flour. Sauté in butter 2 to 3 minutes. (patties will puff up.) Remove hamburger patties from skillet.
For the sauce:
¼ cup dry white wine
seasonings
1 egg, slightly beaten
flour
rounds of bread
fresh parsley
1 ½ teaspoon Grey Poupon mustard
After removing patties from skillet, add dry white wine (beef stock or vermouth can be used). Reduce the liquid, scraping coagulated pan bits, and swirl in mustard. Serve hamburgers on rounds of bread that has been sauteed in butter. Spoon sauce over hamburger. Sprinkle with fresh snipped parsley.
