Best Burger With Blue Cheese Butter

Servings: 4

1 pound minced chuck steak
4 teaspoons salt
1 teaspoon black pepper
4 slices blue cheese butter
4 sesame hamburger rolls, halved

Combine minced steak with salt and pepper. Divide into equal-sized pieces and gently shape into burgers about 1-inch thick. Grill burgers and warm rolls according to instructions below. Top with butter and serve hot in sesame rolls.

Grill over hot coals for 3 minutes per side for rare, 4 minutes per side for medium rare, 5 minutes per side for well done. Place rolls cut side down on grill until warm and lightly golden, 1 minute.

Shape burgers up to 1 day in advance. Cover with cling film and refrigerate.

Blue Cheese Butter

½ pound unsalted butter, softened
¼ pound blue cheese
2 teaspoons black pepper

Place ingredients into a food processor or blender and pulse until well blended. Wrap in foil to form sausage shape. Place into a freezer until hard, about 45 minutes. To serve roll back foil and cut 1-cm thick slices. Use a warm knife.

Can be kept for up to 6 weeks in the fridge and up to 9 months in the freezer.
