Servings: 4 burgers
1 ½ pounds 90 percent lean ground sirloin
1 (4-ounce) can chopped green chiles or jalapeņos
1 tablespoon beef fajita seasoning
1 tablespoon bottled steak sauce
1 bottle barbecue sauce of your choice
4 slices sharp Cheddar cheese
8 slices H-E-B Fully Cooked Bacon
1 sweet onion, cut into ¼-inch thick slices
4 Texas-size hamburger buns
Blend ground meat, chiles, fajita seasoning and steak sauce in a medium bowl. Shape into four patties about ¾-inch thick.Heat charcoal 30 minutes until ash-covered, or heat gas grill on high 10 minutes with lid closed; oil grill grate and position 4 inches above heat source. For stovetop cooking, heat a large nonstick skillet over medium heat. Spray skillet with nonstick cooking spray. Grill or cook patties over medium heat 7 to 8 minutes per side or until center reaches 160 degrees and is no longer pink. Baste tops with barbecue sauce after turning. Top each patty with cheese about 2 minutes prior to removing from grill. Spray onion rings and bacon slices with nonstick spray; grill or cook 3 to 5 minutes per side or to desired doneness. Split buns in half; toast in oven or around edges of grill, if desired. Spread barbecue sauce on buns. Place patties, bacon and onions between buns and serve.
