Blue Cheese Bison Burgers

Recipe from: Chile Pepper magazine

1 ½ pounds ground bison (see note below)
salt and freshly ground pepper
8 ounces blue cheese, crumbled
1 large red onion, sliced crosswise into 4 thick rings
1 teaspoon vegetable oil
4 burger buns, split and toasted
arugula leaves

Preheat a grill. In a mixing bowl, season the meat with salt and pepper. Shape the meat into four ½-inch thick patties. Place on the grill over medium-hot coals. Brush the onions with the oil, and add to the grill. Flip the burgers, and cook to the desired doneness. Do not overcook.

Remove the burgers from the heat to a platter, and flip the onions. Season the burgers with more salt and pepper, place them on toasted buns, and top with a few slices of grilled onion, some blue cheese and arugula leaves.
