Servings: 4 burgers
1 ¼ pound ground meat
½ cup soft breadcrumbs
½ cup sour cream
1 tablespoon green peppercorn, drained
½ teaspoon salt
1 egg, beaten
2 tablespoons butter or margarine
Sauce:
Pan drippings
½ cup broth
1 cup whipping cream
½ tablespoon soy sauce
1 tablespoon green peppercorns, drained
1 tablespoon brandy, optional
Combine ground meat, bread crumbs and sour cream in large bowl.
Crush drained peppercorns and mix to a paste with salt. Add to meat mixture with beaten egg.
Shape meat mixture into patties. Fry in butter over medium heat, turning once, to a crispy brown with a juicy center. Keep warm.
Prepare sauce:
Dissolve pan dripping in broth. Strain. Add whipping cream to strained broth. Bring to a boil. Add soy sauce, green whole peppercorns and brandy, if used.
Remove patties to warm serving plate. Pour sauce over patties.
