Italian Burger

Recipe from: Certified Angus Beef
Servings: 6

3 pounds Certified Angus Beef ® ground chuck
3 tablespoons chopped fresh parsley
1 ½ teaspoons chopped fresh oregano
1 ½ teaspoons chopped fresh basil
3 teaspoons onion powder
3 tablespoons salt
¾ teaspoon pepper
1 recipe tomato Basil Sauce (recipe below)
16 ounces fresh mozzarella
2 8 inch round Focaccia loaves, cut into quarters and sliced in half
melted butter as needed

Combine ground chuck, fresh herbs, onion powder, salt and pepper. Portion into 8 ounce patties and grill to desired doneness. Top each burger with 3 tablespoons tomato Basil Sauce and 3 slices fresh mozzarella. Close lid on grill to melt cheese slightly.

Brush Focaccia bread with melted butter and toast on grill.

Serve burgers on Focaccia bread.

Tomato Basil Sauce

¼ cup olive oil
4 each garlic cloves minced
½ cup chopped sweet onion
¼ cup finely chopped carrots
¼ cup finely chopped red pepper
8 ripe plum tomatoes; seeded and chopped
1 tablespoon sugar
Kosher salt and fresh ground pepper to taste
½ cup fresh basil, coarsely chopped

Sweat garlic, onion and carrots in olive oil in medium size sauce or stockpot. (It is very important to use only stainless steel when cooking with high acid foods.) Add red pepper, tomatoes and sugar. Cook on low heat for 45 minutes, adjust seasoning and add basil.
