Recipe from: Chef Joe Lilly, Asheville High School Culinary Program
Servings: 4 to 8 burgers
2 pounds ground buffalo meat
2 egg yolks
¼ cup southwest rub (see recipe below)
salt and pepper to taste
Thoroughly mix all ingredients and pan fry a tablespoon piece of the meat mix to check flavor. After seasoning is adjusted, grill to an internal temperature of 160°F.
Southwest Rub
2 tablespoons fresh garlic, minced
¼ cup onions, minced
¼ cup fresh cilantro, finely chopped
½ tablespoon lemon pepper
1 tablespoon chipotle powder
2 teaspoons cumin, ground
1 teaspoon chile powder
Thoroughly mix all ingredients and keep tightly sealed in refrigerator for 1 week.
