Traditional Hispanic salad made with nopal (cactus).
1 pound nopales, chopped
4 cups water
1 ½ teaspoons salt
1 garlic clove, finely chopped
12 ounces cheese, grated
4 tomatoes, finely chopped
cilantro, finely chopped
In a pan, mix together the water, chopped nopal, garlic, and salt. Cook on stovetop over medium heat, approximately 8 minutes. Remove from heat and drain in a colander. Let cool for 15 minutes. In a bowl, mix the nopalitos with the tomatoes, cheese, and cilantro as desired. Divide into 6 portions and serve with tortillas and beans.
