Chicken Curry

Recipe from: Robert and Keri Cathey

1 tablespoon garlic, chopped
1 tablespoon shallots, chopped
½ tablespoon powdered pepper
1 teaspoon shrimp paste
1 teaspoon curry powder
2 cans coconut cream
1 package lemon grass
¼ teaspoon MSG
12 chicken thighs
1 teaspoon fish sauce
1 teaspoon sugar
¼ teaspoon salt

Chicken Curry is the most popular food for Cambodians. Different kinds of meats and vegetables can be used. Heat a large pot. Pour in one can of coconut cream; stir over low heat for 5 minutes. Add blended garlic, shallots, pepper powder, shrimp paste, and curry powder. Stir for another 5 minutes. Add the chicken and stir until almost cooked. Add fish sauce, salt, sugar, and MSG, and keep the pot boiling for ½ hour, stirring occasionally. Add the other can of coconut cream. When it begins to boil, remove the pot from the fire. Serve with rice and other condiments like chutney, chopped bananas, nuts, chopped onions, etc.
