Capsicum Recipes (Chile Pepper Recipes)

Pepperoni Sott'aceto (Pickled Peppers)

Servings: About 1 3/4 pounds

Four 1-inch pickling onions
1 ¾ pounds sweet peppers combination of colors is nice
1 teaspoon salt
2 cups white wine vinegar
about ¾ cups water
2 sprigs fresh oregano, thyme or marjoram (optional)

Cut 3 slashes ⅓ inch deep in both ends of the onions. Place in a 1 ½ quart glass jar. Wash peppers and remove stems. Cut in half and remove ribs and seeds. Cut into i inch strips. Place in jar with onions. Sprinkle salt over peppers. pour in vinegar and water, adding more water if necessary to cover peppers. Add herb if desired. Cover jar and let marinate at room temperature at least two weeks before using. To use for an antipasto, remove peppers from the vinegar, rinsed as desired and place on plate. Sprinkle with a little minced fresh garlic, salt and extra virgin olive oil. Garnish with anchovies and olives if desired.
