Chicken Fried Rice

This is a recipe I learned when taking a Chinese cooking class. The chicken can be raw (preferred) or already cooked. If cooked, add it later. Using cold cooked rice helps the grains separate nicely.

2 eggs
6 cup cooked rice
1 cup chicken, bite size pieces
4 stalks of celery
½ Spanish onion
6 green onions, sliced
½ to 1 green pepper, diced
1 cup mushroom, sliced
4 teaspoon soy sauce
1 teaspoon salt
1 to ½ teaspoon MSG
sesame oil

Heat a little peanut oil in a wok, scramble eggs, add chicken, if raw. Let cook a few minutes. Add vegetables, except green onions. Cook a few minutes. Add rice. Stir fry for 10 minutes. Add soy sauce, MSG and salt. Mix well. Cook a few minutes more. Add green onions and about 6 drops of sesame oil. Mix and cook a short time only. Cooking time should be 15 minutes in all.
