Shoyu Chicken

One of the easiest recipes I ran across in Hawaii was Shoyu Chicken. Very good over rice.

soy sauce
sliced ginger root
cooked rice
rice flour

However much chicken cut in pieces. Put in large pot. Cover with sauce made of equal parts of soy sauce, sugar and water. Keep making and adding sauce until you cover the chicken. Add as much sliced ginger root as you like. Bring to a boil. Reduce heat and simmer until the chicken is tender. Serve over rice. The sauce can be thickened with rice flour after you have finished cooking the chicken.
