Servings: 6
3 pounds chicken thighs
¼ cup soy sauce
¼ teaspoon salt
1 bay leaf
½ cup vinegar
3 cloves garlic, crushed
¼ teaspoon peppercorns, crushed
Combine all ingredients in a large saucepan. Cover and let stand for 1 to 3 hours. Bring to a boil, then lower heat and simmer for 30 minutes. Uncover and simmer 15 more minutes or until liquid evaporates and chicken is lightly browned.
