Philosofool's Chili

My chilli recipe is simple and one can add and subtract spices to taste. Also, one can brown one pound beef or turkey with the onions for a meat chili. Soak, according to directions on bag:

8 ounce dried kidney beans
8 ounce dried black beans
8 ounce dried pinto beans
4 ounce dried garbanzo beans

Brown in large pot:

One medium chopped onion
3 to 5 cloves of minced garlic
One pound beef tips, ground beef or ground turkey (optional)

Make sure that the beans are tender. If not, boil them until they are.

1 16 ounce cans tomato sauce
1 8 ounce can of corn
3 or more tablespoon chilli powder
2 tablespoon ground cumin
chopped fresh cilantro to taste (I recomend about 1 fl. ounce of the chopped leaves.) If out of fresh cilantro, ground corriander seed will do, about 1 tablespoon
1 or 2 bay leaves
Ground cayenne pepper, or minced fresh jalapeño pepper to taste
Juice of one lime
2 teaspoon sugar

Cook this covered on a range at low heat for at least an hour. The chilli should be hearty. Check periodically that it isn't too thick. If it is, add enough water to give it the right consistency.
