Recipe from: "The Infamous John Q. Public"
I would like to share these recipes. My friend Elizabeth's mother, Jackie Weaver, gave them to me. Every time I went to their house, Jackie was cooking something... these were just my favorites. Thank you, and have a good weekend.
2 pounds pork, cut into 1 inch cubes
2 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, mashed
2 large potatoes, cut into ½ inch cubes
8 large new Mexico or anaheim chiles, roasted and peeled
1 large ripe tomato, diced
Cover meat with water and oil, and stew about 20 minutes. Remove and reserve ⅔ of water, and cook remaining liquid and meat down until meat renders slightly. Add garlic and onion and fry about 1 min. Add tomatoes, peppers chopped, potatoes and reserved cooking water. Simmer 20 minutes. Salt to taste.
