2 pound pork chops, or pork shoulder steaks, chopped, reserve Bone
2 fresh tomatoes, chopped, or 1 can diced tomatoes
½ medium onion, sliced
2 garlic cloves, minced
1 tablespoon cumin
6 jalapeño peppers, chopped
6 tomatillos, fresh, canned or bottled, chopped
salt and pepper, to taste
¼ teaspoon lemon juice
Cook pork with bone until done. Boil peppers until tender. Place peppers with all remaining ingredients into blender and blend until smooth. Add to pork and bring to boil. Lower heat and simmer for 15 minutes. Serve with tortillas, rice and beans.
