Turkey Chili

1 pound chopped turkey
1 tablespoon cooking oil
1 cup chopped celery
1 16 ounce can tomatoes, cut up
1 15 ounce can red kidney beans, drained
1 8 ounce can tomato sauce
¾ cup vegetable juice cocktail (I use tomato juice)
1 bay leaf
2 tablespoon dried minced onion, or ¼ cup fresh diced
1 teaspoon dried basil, crushed
½ teaspoon bouillon granules or 1 bouillon cube
½ teaspoon ground cumin
¼ teaspoon garlic powder or one fresh clove
¼ teaspoon crushed red pepper, optional
½ cup water

In oil cook celery until almost soft. Add turkey, undrained tomatoes, beans, tomato sauce, juice, bay leaf, onion, basil, bouillon, cumin, garlic, red pepper and water. Bring to a boil. Reduce heat and simmer uncovered for 20 minutes, stirring occasionally. Discard bay leaf before serving.
