Bison Chili

Recipe from: Chile Pepper Magazine, recipe adapted from the National Bison Association

1 pound ground bison (see note below)
1 medium onion, chopped
1 (15 ounce) can pinto beans, rinsed and drained
2 (16 ounce) cans peeled tomatoes
2 teaspoons chili powder
½ teaspoon ground cumin
½ teaspoon salt
½ teaspoon freshly ground pepper
¼ cup chopped cilantro

Warm a nonstick skillet over medium heat, and add the meat and onion. Sauté until the meat is browned and the onions are tender. Add the pinto beans, tomatoes, ½ cup water and all of the seasonings. Cover and simmer for 1 hour, adding more water if the chili becomes too thick.

Add chopped cilantro, and simmer for an additional 10 minutes. Spoon the chili into bowls and garnish with grated cheddar cheese, sour cream and diced jalapeños.
