Seldom follow a recipe exactly but this is one I make often. I do not use tomatoes because of the bitterness they ad. And last time I used cubed pork loin, fine.
3 pounds coarse ground beef
¼ cup olive oil
2 cups water
2 cups beer
2 bay leaves
6 tablespoon chili powder
3 habanera peppers, minced
4 jalapeño peppers, chopped
1 stalk celery
1 green pepper, chopped
1 teaspoon salt
12 cloves minced garlic
1 teaspoon cumino
1 teaspoon oregano
½ teaspoon black pepper
1 teaspoon red pepper
1 teaspoon paprika
3 tablespoon flour
6 tablespoon corn meal
1 tablespoon sugar
1 medium onion chopped
Heat oil in 6 quart pot. Add meat and sear. Stir until gray, not brown. Add water and cook covered at simmer 2 hours. Add all but thickening. Cook 30 minutes at simmer. Take out bay leaves after 15 minutes. Add thickening while stirring. Skim fat.
