Stuffed Avocados

Servings: 4

2 ripe avocados
ground black pepper
½ cup cooked baby shrimp
1 cup mayonnaise
½ cup cooked bay scallops
2 Tbls seafood cocktail sauce
½ cup crabmeat, shredded
1 lemon, sliced
2 green onions, finely chopped
parsley
juice of 1 lemon

Scoop out the avocado meat. Cut into ½ inch cubes. Mix the cubes with the shrimp, scallops and crabmeat. Mix in the green onions. Add the lemon juice and pepper to taste. Add the mayonnaise and cocktail sauce. Fill the empty avocado shells with the mixture. Garnish with lemon slices and fresh parsley. Chill. Serve.
