Crab and Nuts on Melba Toast

Recipe from: Sunday Telegraph Newspaper Body & Soul, May 6th 2001

fresh crab meat
Vietnamese mint
coriander
carrot
cucumber
1 tablespoon palm sugar
2 limes
1 teaspoon fish sauce
garlic
1 teaspoon of chilli
water.
wholemeal toast or Melba Toast
crushed peanuts
snow pea sprouts.

Combine fresh crab meat with finely chopped Vietnamese mint, coriander, carrot and cucumber. For the dressing, dissolve 1 tablespoon palm sugar in the juice of two limes, add 1 teaspoon fish sauce, a little crushed garlic and a teaspoon of chilli and water. Place little mounds of the crab mix on top of small pieces of wholemeal toast. Sprinkle with crushed peanuts and garnish with snow pea sprouts.
