Recipe from: The Cranberry Lady
Servings: 3 cups
1 cup fresh cranberries
¼ cup granulated sugar
¼ cup water
1 large ripe mango, peeled and diced
1 small diced yellow bell pepper
2 kiwi fruit, diced
½ cup finely chopped red onion
¼ cup finely chopped fresh cilantro
1 Tablespoon lime juice
1 small serrano pepper, seeded and minced
1 garlic clove, minced
Salt and pepper
In food processor, coarsely chop cranberries. Transfer to heat-proof bowl; set aside. In small heavy saucepan, combine sugar and water over medium-high heat; bring to a boil, stirring. Cook (without stirring) for 3 minutes. Immediately pour syrup over cranberries; let cool. Stir in mango, bell pepper, kiwi fruit, onion, cilantro, lime juice, serrano pepper and garlic into cranberry mixture. Season to taste with salt and pepper.
