Chopped Cucumber Pickle

Servings: 5 to 6 pints

This pickle has a taste similar to India relish.

50 small or 25 large-sized cucumbers
¾ cup salt
3 medium-sized onions — Use Vidalia Onion or other sweet type onion
3 large green sweet bell peppers, cored, seeded
1 tablespoon mustard seed
1 tablespoon celery seed
3 cups vinegar
4 cups granulated sugar

Wash and grind cucumbers, using medium chopper. Now sprinkle with salt and let stand overnight. Drain and squeeze out juice; use colander. Grind onions and peppers. Add to ground cucumbers. Add mustard seed, celery seed, vinegar, and sugar. Bring to boil and boil 10 minutes. Put in jars and seal.
