5 ounces dark rum
2 ounces lime juice
⅓ cup sugar
9 frozen peach cubes — see below
¾ cup crushed ice
fresh mint sprigs
Into blender container, pour rum, lime juice, and sugar. Add peach cubes, one at a time, blending smooth after each addition. Gradually add crushed ice, blending smooth. Pour into stemmed glasses. Garnish with mint sprigs.
Frozen Peach Cubes
1 pound fresh peaches
1 tablespoon lemon juice
Halve and pit peaches, unpeeled. Slice into blender container, add lemon juice, and purée. Pour into ice cube tray and freeze. When solid, store peach cubes in freezer container until used.
