Baked Eggs

Recipe from: The Justin Wilson #2 Cookbook: Cookin' Cajun by Justin Wilson

eggs
muffin tin
olive oil
Benedictine, Cointreau, creme de menthe, or brandy

Put a drop or two of olive oil and one egg in each muffin tin. In each egg, put a couple of drops of either Benedictine, Cointreau, creme de menthe, or brandy. Bake at about 325°F. Watch them and take them out when they are as hard as you like them
