Sausage and Egg Casserole

Servings: 8

½ pound French bread, crust trimmed, cut into 1 inch cubes
2 pounds pork sausage
16 eggs, beaten to blend
1 ½ cup shredded medium-sharp cheddar cheese
snipped fresh chives, optional

Lightly grease 9 by 13 inch ovenproof glass baking dish. Arrange bread cubes evenly in bottom of prepared dish. Brown sausage, in heavy, large skillet, over medium-high heat, stirring frequently and breaking up with spoon, about 15 minutes. Sprinkle sausage over bread, using slotted spoon. Pour eggs over sausage. Top with cheese and then chives. Cover with foil and refrigerate overnight. Preheat oven to 350°F. Remove foil and bake casserole until eggs are set, 30 to 35 minutes. Cool 5 minutes. Serve hot.
