Recipe from: Vittoria Ragusa, Sicily
6 eggs
½ pound sausage
2 cloves garlic
some parsley
2 tablespoons breadcrumbs
2 ounces pepper cheese
olive oil
salt
Beat eggs to breadcrumbs, chopped parsley, a pinch of salt, and pour in a pan with hot oil. Put the flame low and place very thin slices of sausage, garlic in pieces, sliced cheese on top. Shake the pan to prevent the omelet to stick at the bottom. Turn the omelet on a dish and put it back in the pan to cook the other side.
