1 ½ cup tomato sauce (or use a thin spagetti sauce)
12 eggs
salt and pepper to taste
minced parsley
Preheat oven to 350°F.
Place 1 tablespoon of tomato sauce in individual egg dishes (or small ramekins or muffin cups). Heat in the oven until hot. Add 2 eggs to each dish and season with salt and pepper. Bake until set.
Surround each egg with additional hot tomato sauce and sprinkle with minced parsley.
