Catfish Chowder

Recipe from: Louise Austin

This recipe is from my aunt, Louise Austin, from the cookbook, What's Cooking with FLO?, favorite bayou country recipes of FLO (For Ladies Only) from the First Baptist Church in Napoleonville, Louisiana published in 1990.

1 pound catfish filets, cut in cubes
1 cup half & half
4 cups milk
4 potatoes, diced
4 stalks celery, sliced
2 carrots, sliced
2 green onions, sliced
1 tablespoon butter or margarine
1½ teaspoon salt
½ teaspoon white pepper
butter or margarine

Heat milk and cream in double boiler. Do not boil. Cook potatoes in just enough water to barely cover. Drain most of water off and pour them in cream and milk. Sauté celery, carrots, and green onions in 1 tablespoon butter. Add to milk, saving the liquid. Add fish to this liquid, adding a little water, and poach until done. Add to milk mix and seasoning. Serve with pat of butter in each one.
