Crispy Oven-fried Fish

Recipe from: Pacific Fresh
Servings: 6

⅓ Cup Milk or Buttermilk
2 ½ Pounds Pacific Red Snapper or Halibut Fillets, cut into serving pieces
1 Tablespoon Vegetable Oil
1 Tablespoon Butter or Margarine
Paprika, for topping
Freshly Grated Parmesan Cheese, for topping
Tartar Sauce

Cornmeal Coating:
3 Tablespoons All Purpose Flour
3 Tablespoons Yellow Cornmeal
½ Teaspoon Dry Mustard
¼ Teaspoon garlic Powder
¼ Teaspoon Dried rosemary, crumbled
⅛ Teaspoon Freshly Ground Pepper
½ Teaspoon Salt

Prepare cornmeal coating by stirring all coating ingredients together in a small bowl, until well mixed. Set aside.

Preheat oven to 475°. Pour milk into a pie plate. On a large piece of waxed paper, spread coating. Dip fish in milk and then roll in corn meal mixture to coat evenly. Place oil and butter in a 7 ½ by 11 ¾ inch baking dish and place in oven. When butter melts, add fish and turn in butter-oil mixture to coat evenly. Sprinkle with paprika and Parmesan cheese. Bake until fish flakes when tested with a fork, 8-10 minutes for snapper and 10-12 minutes for halibut.
