Authentic Bahamian Fish Chowder

Time: 1 hour
Servings: 6

2 pounds boneless grouper
1 medium onion, chopped
2 ribs celery, chopped
1 medium bell pepper, minced
2 medium chopped potatoes
4 cups diced tomatoes
5 cups fish stock
½ teaspoon thyme
½ teaspoon allspice
2 Scotch Bonnet Chiles
1 bay leaf
1 tablespoon lime juice
salt and pepper to taste
1 tablespoon seasoning salt

Dice the fish into approximately ½ inch pieces and place in mixing bowl Marinate with lime and spices and place in fridge for 2-3 hrs Bring fish stock to a boil Add all ingredients and simmer for 1 hr, stirring occasionally
