4 catfish filets
4 tablespoons Old Bay seasoning
1 cup yellow cornmeal
1 cup skim milk or buttermilk
¼ cup oil
In a shallow dish mix spices and cornmeal together. In another dish, add milk.
Dip each filet into milk and dredge in the cornmeal mixture.
Heat peanut oil in a large skillet. Place the coated catfish filets in the skillet and cook on each side for five minutes, or until done and golden brown.
