white vinegar or lemon juice
2 cups corn meal
½ cup flour
Thinly slice alligator, ¼ inch thick by 4 inch long. Remove all white fatty tissue. Place gator slices in glass bowl. Cover with vinegar or lemon juice. Add salt and red pepper. Soak for half an hour and no more.
Roll in corn meal and flour seasoned with red pepper. Fry in hot grease in deep fat fryer or iron pot until golden brown, about 5 minutes.
