Salsa alla Puttanesca (Whore Sauce)

1 onion, finely diced
2 cloves garlic, finely sliced
2 anchovy fillets, chopped
1 small red chile, deseeded and finely chopped
2 teaspoons capers, rinsed and drained
1 handful olives deseeded and quartered
1 cup red sauce
1 tablespoon chopped fresh flat-leaf parsley
salt and pepper — Use salt sparingly because the capers, olives, and anchovies also provide salt

In a heavy sauce pot, sauté the onion, garlic, anchovies, and the chile for 8 minutes till soft over a mediumish heat. Add in the capers and olives and sauté for about 2 more minutes. Dump in the tomato sauce and simmer for about 8 to 15 minutes or somewhere it is the consistency that you would like. Check the seasoning for salt and pepper, add in the parsley and you got a one sinful sauce.
