Panzanella is an Italian bread salad.
4 (½ inch thick) slices Italian bread, toasted and cut into ½ inch cubes
1 pound (500g) ripe tomatoes, cored and cut into ½ inch chunks
¼ cup finely chopped red onion
¼ cup finely chopped fresh basil
½ clove garlic, crushed
5 teaspoons extra virgin olive oil
salt and freshly ground pepper to taste
In a large bowl combine the bread, tomatoes, red onion, basil, garlic, olive oil, salt and pepper; toss to blend. Season to taste and serve at room temperature.
