Recipe from: Adriana's Italian Gourmet Cookies
2 tablespoons deep frozen spinach
2 tablespoons Fontina Valdostana cheese, diced
2 slices rindless bacon—pancetta affumicata
1 tablespoon butter
1 slice square loaf bread
1 teaspoon extra virgin olive oil
½ garlic clove
1 leaf sage
salt and pepper
Heat the oven to 320°F.
Chop the pancetta and clean the garlic. Thaw the spinach (microwave) and sauté in a pan with butter and garlic. Brown the pancetta in a pan; toast the bread slightly and cut into triangles or squares. Place the spinach on the bread, then the diced cheese, then the bacon. Grill for a few minutes in the oven
