What about tarantello? It is the back of the tuna. Tuna's tarantello is tuna fish in extra virgin olive oil served with bucatini pasta.
1 pound of bucatini
4 ounces of tuna's tarantello
1 jar of small hill tomatoes
extra virgin olive oil
1 peeled cloves garlic
1 onion, salt and pepper
Brown onion in extra virgin olive-oil with a clove of garlic, add 4 ounces of tuna's tarantello in small pieces and about 8 ounces of small pieces of tomato. Simmer for about 10 minutes. Cook bucatini and drain firm. Pour sauce on the underdone bucatini and scatter with minced parsley and black pepper.
