Carriage Mozzarella

Servings: 4 people

400 gr. mozzarella of bufala "Delle Rose"
2 eggs
a glass of milk
a tablespoon of flour
grated bread crumbs
8 slices of toasted bread
extra virgin oil.

Soften the slices of bread in the milk and put a slice of mozzarella between the two slices of bread. Salt, batter in the flour, in the beaten egg and in the grated bread. Fry the slices well gilded, holding it soft, in abundant oil and let it dry on absorbent paper. Serve hot. Could be prepared without the second slice of bread of coverage and decorate it with olives and imported sharp cheese.
