Kakitamajiru (Egg Drop Soup) かき玉汁

Servings: 4

3⅓ cups dashi soup stock
½ teaspoon salt
1 tablespoon soy sauce
2 eggs
12 to 16 boiled string beans
2 shiitake mushrooms

Thinly slice shiitake mushrooms. Heat dashi soup stock in a pan. Add shiitake slices, soy sauce and salt in the soup and bring to a boil. Lightly beat eggs in a bowl. Pour the eggs into the soup slowly. Stop the heat and add boiled string beans in the soup.
