1 quart water
2 tablespoons salt
4 cups napa cabbage, chopped
¼ teaspoon salt
1 teaspoon garlic cloves, minced
¾ cup scallions, sliced
1 teaspoon arbol chile powder
1 tablespoon oriental toasted sesame oil
1 teaspoon ginger juice, squeezed in a garlic press
In a large saucepan over medium-high heat, bring salted water to a boil Add cabbage and cook for 30 seconds while stirring, until wilted. Drain, let cool, and transfer to a mixing bowl. Add in garlic, scallions, chile powder, sesame oil, and ginger juice, toss together until coated.
Serving suggestions:
With barbecued foods (especially ribs), Chinese potstickers, fish tacos, or sea bass.
Note:
Bok choy or Oriental mustard greens may be substituted for Napa cabbage
