Spinach

Recipe from: Mimi Chung

This is very easy, but I don't have exact measurements, you need to do it by taste.

a large bunch of spinach
1 or 2 teaspoons soy sauce
1 teaspoon sesame seed oil
white vinegar
garlic
black pepper
roasted sesame seeds
scallions
1 tablespoon white sugar

A large bunch of spinach. Wash this well and trim or pull off the stems. Parboil these (boil the water, and throw them in , as soon as the water boils again remove them). Drain in a colander under cold running water and squeeze out the excess water. Put in a bowl, and add 1 or 2 teaspoons soysauce, a little bit of sesame seed oil, a very small amount of white vinegar, garlic (either fresh or powdered), black pepper, roasted sesame seeds, scallions, and white sugar (a tablespoon, or to taste). Mix it together with your fingers, and taste and season accordingly. Enjoy! :) This makes a small amount, so double if need be. I'm not sure about the measurements, because I do it by sight and flavor!
